CHOCOLATE COVERED DATES

the humble date turns into a nourishing version of the beloved turtle in this recipe with melted chocolate, nut butter and pecans


dates are a great source of fiber, vitamin b6, folate, iron, potassium, vitamin k and all natural energy. they are tonifying for the uterus and can help relieve cramps and bloating during the menstrual phase. they are also low on the glycemic index meaning they are blood sugar and hormone friendly!


stable blood sugar is always important but especially so during the second half of your cycle. keep the hanger at bay and cop a chocolate covered date.


INGREDIENTS --


medjool dates

1/2 cup your choice of dark chocolate

1 tsp of coconut oil

nut butter [dealer's choice]

pecans [1 per date]


toppings [optional]

flaky sea salt

rose petals


HOW TO --


start by pitting the dates. cut into them until you feel the pit, open and remove, leaving a nice space to fill with nut butter. arrange on a baking sheet.


spoon your choice of nut butter into each date [about a teaspoon].


smush a pecan into the center of each.


once those are all set. set up a double boiler on the stove - set a small saucepan with a couple inches of water on medium-high heat. place a glass bowl on top and add chocolate and coconut oil to the boil. stir until completely melted. remove from heat


spoon chocolate over each date, coating them nicely.


add toppings and put in freezer.


when you're ready to eat, take a few out of the freezer and let them soften for a few minutes.
